Mixing Instructions: Lemon Cake Mix 6/5lb

Directions:
50 lbs Lemon Cake Mix
27.5 lbs Water

1. Pour 1/2 of the total water into mixer bowl, add cake mix
2. Mix on medium speed* using a paddle for 2 minutes
3. Add remaining water gradually while mixing on low speed for 30 seconds.
4. Scrape bowl and paddle
5. Mix on low speed* for 2 minutes
6. SCALE: For a 8 inch layer pan use 14.5 oz. batter
For a 9 inch pan use 20 oz. batter
For a 13 x 18 inch sheet pan use 3 lbs. 14 oz. batter
For a 18 x 26 inch sheet pan use 7 lbs. 12 oz. batter
7. Bake at 350⁰ F for 30 to 35 minutes in a standard oven***
Convection oven bake at 300⁰ F 25 - 30 minutes
*Low speed is #1 on a 3 speed mixer, or #2 on a 4 speed mixer
medium speed is #2 on a 3 speed mixer and #3 on a 4 speed mixer
***Baking time may vary depending on oven and oven load
