This is really good tapioca. I cook it as a pudding desert. While you can soak it over night, I have found the cooking it in my crook pot is easier and produces a thick rich pudding.

3 3/4 cups milk

1/2 cup sugar

2 eggs

2/3 cup Tapioca

1 tbs vanilla extract

Add milk, sugar and eggs into crock pot. Mix well. Add tapioca. Stir

Put crock pot on high and let cook for 3 hours. Stir every 30 minutes, slightly more a it thickens.

When tapioca is cooked thru, add vanilla and mix. Put into serving cups and chill.

For extra fluffy tapioca, separate the egg whites from the yolks and save. When you add the vanilla, whip the whites into a meringue and fold into pudding.
