Pumpkin Spiced French Toast


3 large eggs
½ cup half-and-half cream
¼ cup canned pumpkin puree
1 tsp ground cinnamon
1 tsp vanilla extract
¼ tsp pumpkin pie spice
¼ cup finely chopped walnuts
8 slices day-old bread


Lightly oil a large skillet and place over medium heat. In a large bowl, whisk together all ingredients except for bread. Soak the bread, one slice at a time, in the pumpkin mixture. Place the soaked bread in the prepared skillet and stir the pumpkin mixture before soaking the next bread slice. Once all slices have been soaked and placed in the skillet, cook for 3 minutes on each side or until golden brown. Serve warm.
