Banana Bran Muffins


1 cup all-purpose flour
1 cup whole wheat flour
1 cup oat bran
2 tsp baking powder
2 tsp baking soda
1 tablespoon ground cinnamon
½ tsp ground nutmeg
¼ tsp allspice
2 eggs
1 cup orange juice
1 tsp vanilla extract
½ cup granulated sugar
½ cup packed brown sugar
½ cup unsweetened applesauce
1 cup mashed ripe bananas
½ cup chopped walnuts


Preheat oven to 400 degrees F. Grease muffin tins or use paper liners. Combine flours, oat bran, spices, baking powder and baking soda in a large bowl. In a separate bowl, beat together the eggs, orange juice, vanilla, sugars, applesauce and vanilla until well combined. Pour the wet mixture over the dry mixture and stir just until moistened. Fold in the bananas and nuts. Spoon the mixture into the muffin cups, filling each cup two- thirds full. Bake for 15-18 minutes. Cool in pan for 5 minutes before removing  from pans to cool completely on wire racks.
