Eggnog French Toast


4 eggs
1 cups eggnog
1/8 cup sugar
¼ tsp vanilla or rum extract
10-13 slices English muffin bread
Confectioners' sugar, optional
Maple syrup


Preheat a griddle or large skillet. In a large bowl, beat together the eggs, eggnog, sugar and extract. Add bread slices and soak for 2 minutes on each side. Place soaked slices on the preheated griddle or skillet and cook until slices are golden brown on each side and cooked through. Dust with confectioners’ sugar if desired and serve with syrup.
