Gingerbread Pancakes


1-1/3 cups all-purpose flour
1 tsp baking powder
1 tsp ground cinnamon
½ tsp ground ginger
¼ tsp baking soda
¼ tsp salt
1 egg
1¼ cups milk
¼ cup molasses
3 tablespoons vegetable oil


In a large bowl, mix together the flour, baking powder, cinnamon, ginger, baking soda and salt and set aside. In a separate bowl, whisk together the egg, milk, molasses and oil. Add the wet mixture to the flour mixture and beat until just blended. Pour ¼ cup of batter at a time onto a greased, heated griddle. When bubbles form on the top of the pancake, flip and continue cooking until both sides are golden brown. Repeat with remaining batter. Serve with syrup if desired.
