Pumpkin Chocolate Chip Granola Bars


Ingredients:

3 ¼ cups old fashioned (rolled) oats
½ tsp pumpkin pie spice
½ tsp cinnamon
¼ tsp nutmeg
½ tsp salt
¾ cup brown sugar
½ cup pumpkin puree
¼ cup applesauce
¼ cup honey
1 tsp vanilla extract
1 cup chocolate chips

Directions:

Preheat the oven to 350 degrees F. Grease an 8”x8” baking pan and set aside. In a large bowl, combine oats, pumpkin pie spice, cinnamon, nutmeg and salt and set aside. In a separate bowl, combine the brown sugar, pumpkin, applesauce, honey and vanilla and mix until smooth. Pour the mixture over the oats and stir until all oats are moist. Stir in the chocolate chips. Press the mixture evenly into the prepared pan. Bake for 30-35 minutes or until golden brown. Remove from the oven and cool in the pan on a wire rack for 5 minutes. Cut into bars with a sharp knife, remove from pan and cool completely.
