Lemon Loaf


8 oz butter
2 cups granulated sugar
4 eggs
grated rind of 2 lemons
1 cup flour
handful of poppy seeds
2 tsp baking powder
1 tsp salt
1 cup milk
½ cup sugar dissolved in juice of 2 lemons


Preheat oven to 350 degrees F. In a mixing bowl, cream together butter and sugar. Add eggs one at a time, beating after every addition. Add lemon rind. In a separate bowl, sift together the flour, baking powder, poppy seeds and salt. Add the flour mixture to the batter alternately with milk and mix well. Pour the batter into 3 medium loaf pans. Bake for 45-60 minutes. Remove from oven, turn cake out of pan and onto wire racks. Drizzle lemon/sugar mixture over the loaves and serve warm.
