Breakfast Pizza


2/3 cup warm water
1 (.25 ounce) package instant yeast
½ tsp salt
1 tsp granulated sugar
¼ tsp dried oregano
1 ¾ cups all-purpose flour
6 slices bacon, chopped
½ cup green onion, thinly sliced
6 eggs, beaten
salt and pepper to taste
½ cup pizza sauce
¼ cup grated Parmesan cheese
2 ounces thinly sliced salami


Preheat oven to 400 degrees F. Place warm water in a large mixing bowl. Stir in yeast, salt, sugar and oregano. Add 1 cup of flour, mix well, then add remaining flour. Cover the mixture with plastic wrap and let rest for 10-15 minutes. While the dough is resting, place bacon in a large, deep skillet. Cook the bacon over medium heat until evenly brown. Add green onions and cook for 1 minute. Add eggs and cook, stirring frequently, until the mixture has the consistency of scrambled eggs. Add salt and pepper to taste. Spread the dough evenly over a lightly greased pizza sheet. Spread pizza sauce over dough, then top with bacon and egg mixture. Top with cheese and salami and bake in preheated oven for 20-25 minutes or until golden brown. Serve.
