Banana Nut Granola


4 cups quick oats
1 cup rolled wheat flakes
 ½ cup wheat germ
½ cup whole wheat flour
1 cup brown sugar
 ½ tsp salt
¾ cup walnuts
½ cup vegetable oil
3 tablespoons water
1 ½ tsp. banana flavoring
1 tsp vanilla extract
2 tsp butter flavoring
2/3 cup banana chips


In a large bowl, combine quick oats, wheat flakes, wheat germ, flour, brown sugar, salt and walnuts. In a separate bowl, combine vegetable oil, water, banana flavoring, vanilla extract, and butter flavoring. Pour the wet ingredients over the dry ones. With clean hands, thoroughly mix the ingredients until well combined. Spread the mixture into a 9”x13” in pan or several pans if needed. Bake for 1 hour, stirring every 20 minutes, or until the granola is dry and lightly browned. Remove from oven and cool completely before adding banana chips. Toss well to combine and store in an airtight container.

*Note: for fine and flaky textured granola, replace the water in the recipe with oil and stir immediately after removing from the oven. For a chunkier texture, use more water and less oil, stir less while baking, and let set till partially cooled after removing from oven before stirring.
