Baked Sweet Potato Fries
1 tablespoon brown sugar
2 ½ tsp ground cinnamon, divided
½ tsp ground ginger
½ tsp salt
2 lbs. sweet potatoes, peeled and cut into sticks
1 tablespoon canola oil
Preheat oven to 400 degrees F. Spray a shallow baking pan with non-stick cooking spray. In a small bowl, combine brown sugar, 2 tsp cinnamon, ginger and salt. In a separate bowl, combine sweet potatoes and oil. Toss well to coat. Add spice mixture to the sweet potatoes and toss again until well coated. Spread sweet potatoes in prepared baking dish in a single layer. Bake for 30-35 minutes, turning once, until sweet potatoes are tender and lightly browned.
