Morning Rice


1 cup instant white rice
1 cup water
1 (8 ounce) carton apple flavored yogurt
¼ cup raisins
¼ cup chopped nuts (any variety)
1 teaspoon cinnamon
Apple juice (optional)


In a small microwave safe bowl, combine rice and water. Cook on high for 6 minutes and let stand for 5 minutes until water is fully absorbed. Combine rice with yogurt, raisins, nuts and cinnamon in medium bowl and mix well. Chill for at least 30 minutes. When ready to serve, add a small amount of apple juice to moisten and garnish if desired.
