Black Walnut Banana Blueberry Muffins


1 (8 oz.) pkg. cream cheese, softened
1 cup sugar
¼ cup butter-flavored shortening
1 cup mashed ripe banana
2 eggs
2 ¼ cups all-purpose flour
1½ tsp baking powder
½ tsp baking soda
1 cup chopped black walnuts
1 cup fresh blueberries


Preheat oven to 350 degrees F. Combine cream cheese, sugar and shortening, mixing until well blended. Blend in bananas and eggs. Add combined remaining ingredients, mixing just until moistened. Pour into greased and sugared muffin pan, filling each cup 2/3 full. Bake for 25-30 minutes. Cool 5 minutes; remove from pan.
