Sweet Corn Applesauce Muffins


Ingredients:

1 1/3 cups Natural White Flour
2/3 cup sugar
1 tsp baking powder
1 tsp cinnamon
¼ tsp nutmeg
½ tsp salt
2 eggs
1 cup raw “super sweet” sweet corn (about 3 cobs)
1/3 cup vegetable oil
½ cup applesauce

Directions:

Preheat oven to 350 degrees F. Stir in remaining ingredients until just moistened. Fill paperlined muffin cups half full with batter. Bake for 30 minutes. Cool. Frost as desired.

*Note: the sweet corn is crunchy and takes the place of nuts in this recipe.
