Chocolate Chip Zucchini Muffins


¾ cup all-purpose flour
¾ cup whole wheat flour
¾ cup sugar
1 tsp baking soda
1 tsp ground cinnamon
½ teaspoon salt
1 egg, lightly beaten
¼ cup vegetable oil
¼ cup applesauce
¼ cup milk
1 Tablespoon lemon juice
1 tsp vanilla extract
1 cup shredded zucchini
¼ cup miniature semisweet chocolate chips
¼ cup chopped walnuts


Preheat oven to 350 degrees F. In a bowl, combine flour, sugar, baking soda, cinnamon and salt. Combine the egg, oil, milk, lemon juice and vanilla; mix well. Stir into dry ingredients just until moistened. Fold in zucchini, chocolate chips and walnuts. Fill greased or paper-lined muffin cups two-thirds full. Bake for 20-25 minutes or until toothpick inserted in center of muffins comes out clean.
