Apple Cinnamon Muffins


1 ½ cups all-purpose flour
½ cup whole wheat flour
1 Tablespoon baking powder
1 tsp baking soda
½ tsp salt
¼ cup sugar
¼ cup brown sugar
½ cup natural apple sauce
3 Tablespoons Downey’s Cinnamon Honey-Butter
½ cup nonfat plain yogurt
¼ cup milk
1 tsp vanilla
1 egg
1 apple, peeled and diced


Preheat oven to 400 degrees F.  Butter muffin cups or line with paper liners. In a large bowl, mix together white flour, wheat flour, baking powder, baking soda, and salt. In another bowl, cream together sugar, brown sugar, apple sauce, honey-butter, yogurt, milk, and vanilla.  Beat in egg. Add wet ingredients to dry ingredients and mix well. Stir in diced apple. Pour batter evenly into muffin cups and bake for 18-20 minutes. Remove from muffin tin and cool on wire racks.
