Evaporated milk, also known as dehydrated milk, is a shelf-stable canned milk product with about 60% of the water removed from fresh milk. Evaporated milk has no added sugar, and when mixed with an equal amount of water, becomes the equivalent of fresh milk. Evaporated milk is mainly used for dessert and baked good recipes and has a longer shelf life than fresh milk.
