Paramount crystals are used to aid in the melting of carob, chocolate, and yogurt coatings. These crystals help make the coatings smooth and easier to pour into molds and also help to thin out coatings for ease in dipping and coating. Use up to 1/4 cup of crystals per each pound of coating. Add a little at a time in the melting process, stir between each addition, until the desired consistency is reached.

  2. Add 1 teaspoon to 2 cups of chocolate you are
  3. melting. If more is needed, add small
  4. amounts until chocolate starts to melt.
